making my own birthday cupcakes

To be fair, Hank did offer to buy me a cake for my birthday.

Buy after baking my own cookies and brownies from scratch, I just handle the idea of a store bought cake. I am not much of cake eater. And with only two of us eating it, it would go stale too quickly.

I do like carrot cake but didin't want to make a whole cake. I was very happy to find the cupcake recipe at Martha Stewart. And luckily, this recipe does NOT call for cake flour since I haven't been able to find any yet.
